The Amapola Rico Taco opened its first restaurant in March 1975.
The original name of this first location was Amapola Drive-In. It was
an old A&W restaurant located at 1279 W. Baseline in the city of
San Bernardino. Its founder is Rosina Gallardo, who migrated here from
Zacatecas, Mexico. She brought with her, her delicious recipes and her
strong desire to succeed.
That
combination proved fail proof, and she quickly acquired loyal life long
customers. Within two years she opened her second restaurant located
at 596 N. Mt Vernon Ave. It was at this time that she added the word
Rico Taco to the restaurant name. You could come here and feel like you
were literally eating at a corner taco stand in Mexico. This
restaurant was one of the few places where one could find authentic
dishes like, lengua (beef tongue), cabeza (beef head), birria (goat),
as well as the classics such as, carne asada (steak), and carnitas
(pork). But of course, no one can argue that what put the Amapola Rico
Taco on the map was our exquisite chile verde (green chile pork)!
In
1985 Rosina’s dreams of success truly began to come true. She acquired
her first SBA loan and the old A&W building was demolished. In its
place came a brand new restaurant with indoor sitting and a drive-thru
to better serve her customers. In August of 1999, she opened her third
drive-thru location at 7990 Tippecanoe in San Bernardino.
Although we continue to be a business run by family, we incorporated in 2004.
2005
was a year of great expansion. That year we opened our official
corporate offices and catering kitchen. In addition to our restaurants,
our customers can now have our delicious food catered to their special event. This new kitchen is located adjacent to our first restaurant where it all began.
In June of this same year we opened our fourth location at 291 e Valley, Suite A in the city of Colton.
We
want to continue to grow. After 32 years, it is still our priority to
keep Rosina’s desire of providing excellent quality food and
outstanding service to all our loyal customers. Thanks to all of you
